Mangos flourish in tropical regions like India, Mexico, and Florida. There are about 30 varieties of commercially available mangos, but I prefer Kesars. They’re soft, sweet, and not fibrous in the way that mangos often are. They blend up beautifully for this delicious vegan version of a classic Indian lassi.

serves 2

  • 4 ripe mangoes, such as kesars, peeled, seeded, and cut into chunks  
  • 1 cup ice
  • ¾ to 1 cup unsweetened oat milk
  • 1 tbsp chia seeds
  • Coconut whipped cream for topping (optional)

Blend everything together, with the exception of the whipped cream, until super smooth. Divide among two glasses and top with coconut whipped cream, if you like.
